The answer to this question is really not that much different than the answer to your questions about becoming a life flight pilot. You must first undergo basic flight training either in the military or as a civilian. You then need to build experience. I am not too familiar with the heli skiing companies, but I can almost guarantee you that 2000 hours total with 500-1000 turbine hours would be a minimum starting point for employment with these companies.

Here is the basic civilian plan:

0-200 hours – flight training including instructor training
200-1000 hours – flight instruction to build time
1000-2000 hours – first turbine job, such as offshore or tours

Then, when you get to 2000+ you can start to have your pick of the jobs you really want. Obviously this is simplified and there are a thousand variables, but you need to complete those initial steps of training and building hours in order to get your foot in the door. The military is one way to do this, and civilian training + instructing is the other way. Regardless, Heli skiing will not be your first pilot job, even after instructing.
